½ of an onion diced
2 inches of julienned ginger
1 julienned garlic clove
olive oil

Combine the juice from ½ of an orange, grapefruit and lemon or lime

In a saucepan, brown the ginger and garlic in oil. Combine the vegetables and fruit sections. Drizzle with the juices, and top with the crunchy garlic and ginger. 

4. Grain, Green and Mushroom Salad

2 pounds of shiitake mushrooms halved and broiled 
1 pound of spinach
1 ½ cups of cooked quinoa
8 ounces of crumbled feta cheese


½ cup of red wine vinegar
1/3 cup of olive oil 
Salt and pepper to taste
Combine and whisk. 

Put the spinach in a bowl and top with the mushrooms and quinoa. Add the dressing and toss. Top with the cheese and serve.
